We made the tastiest lunch the other day and thought we had to share it with you! This vegetable frittata is packed full of goodness – vitamins and fibre from the veggies, protein from the eggs (builds muscles), carbs from our potatoes (gives you energy) and a little bit of tasty naughtiness from the cheese! This is an easy, cost effective lunch to make, using ingredients you already have in your cupboards. The vegetables we used in this recipe can be changed depending on the season.
Ingredients
- 400g Potatoes (we used Saggita) sliced in to about 5mm rounds.
- 7 large eggs
Any veg you like, we used a total of 300g, including:
- French beans
- Asparagus
- Broccoli
- Peas
- Broad beans
For garnish:
- Spring onions, parsley and chives
- Cheese of choice, grated
Method
- Slice the potatoes and add to a pan of salted water. Bring to the boil.
- Add the vegetables and bring to the boil, then drain and set aside.
- Chop the spring onions then sauté in olive oil. Add the vegetables.
- Beat the eggs, season and add herbs, then add this to the veggie mix. We’d recommend cooking this on top of the hob until almost firm.
- Then top with a sprinkling of cheese of your choice and place under grill until firm and golden.
- Serve with your favourite side salad and enjoy.
